Three terms for a delivery model

Virtual brand, dark kitchen and ghost kitchen are often used interchangeably in conversations with restaurant owners. They describe delivery-only food businesses with a full menu and no dining room.

Customers see a name, logo, menu, photos and reviews in an app, just as they do for other restaurants. They order, pay and wait for a courier. There is no table to sit at. The customer relationship takes place through the phone.

Why there are different names

Dark kitchen and ghost kitchen describe a kitchen the customer never sees, without a shopfront or dining room. Virtual brand describes the name that exists in the app. Virtual restaurant brings both ideas together.

Customers may not care about the distinction. Owners should: where the kitchen operates determines initial investment and the risk taken before the first order.

The kitchen makes the difference

The brand can look the same in each arrangement. What differs is who cooks and where.

A separate dark kitchen

A conventional dark kitchen is a separate production space rented for delivery cooking. It has its own rent, staff, equipment and utility bills. Several such kitchens may operate in one building under different brands.

This suits someone building a network from scratch who is prepared to invest before earning. Before the first delivery, they need to equip the kitchen, hire people and pay for a venue with no seated customers.

A kitchen already operating

In our model, the kitchen is your existing restaurant, pizzeria or lunch venue, already cooking every day. The virtual brand is added to that operation. You use equipment, people and hours you already pay for instead of adding a building or shift.

The customer sees a separate restaurant in the app. You see the same cooking line and team, with extra collection orders. One kitchen handles your dining-room brand and one or more virtual brands.

The team does not need to relearn cooking. Before launch, it is trained on the new menu, with dishes matched to equipment you already have: oven, convection oven, fryer or grill. Equipment should be assessed before any purchase is considered.

How the costs differ

Fixed costs show the main difference. In a separate dark kitchen, each order must help pay for rent, wages and equipment used only for delivery. Until sales build, you must fund the start-up months yourself.

In an existing venue, dining-room sales and your current menu already support those costs. Virtual-brand orders use spare capacity, reducing the additional costs and risk of starting. If the model does not work, you can switch off the brand and return to your previous operation.

Visibility is another cost. A new restaurant in an app starts without reviews or history. Someone must prepare profiles, photos, descriptions and promotions. For a separate kitchen, this requires more budget and time. With our brands, we handle that work and you cook.

Our brands have no joining or monthly fee. We charge 35% of each transaction and cover marketing costs and platform commissions. If you do not earn, neither do we. See how to calculate virtual restaurant earnings.

Inside a virtual brand

For the kitchen team, everyday work changes less than expected. One order follows this route:

  • A customer orders in Glovo, Uber Eats, Wolt, Bolt Food, SocialFood or Pyszne.pl.
  • The order reaches one Rebel APP device alongside orders from other apps, instead of separate tablets and chargers.
  • The kitchen prepares the dish using the brand's instructions. Prices and portion sizes are consistent across the network.
  • A courier collects the bag.
  • We handle customer service and complaints; you keep cooking.

If a product runs out, switching it off once removes it from every app.

We match brands to existing equipment and ingredients. Mniamciu offers Polish soups, meals and sides; you list what is available that day. Holy Taco suits kitchens serving tortillas and kebab. Sznyclove suits kitchens frying cutlets. Recipes and a shopping list are available on request.

Three ways to work with us

Owners have different needs, so there are three options:

  1. Cook our brands. Use your kitchen for more orders. We handle profiles, paperwork and marketing. See I have a kitchen and want more orders.
  2. List your own brand. Put your brand into delivery without managing several dashboards. We create and manage profiles, prepare photos and descriptions, manage prices and promotions, and reply to reviews. See I want my own brand in delivery.
  3. Combine both. Your brand and ours operate in one kitchen, with orders on one device. See both models together.

You do not need to choose before talking to us. Tell us what you cook, when and with which equipment. We work out the rest together, with an adviser throughout our cooperation.

When it does not make sense

This model does not suit every existing kitchen. If the line is at capacity all day, extra orders can disrupt dining-room service. If there is no room for bags at collection, a new brand will not fix the resulting congestion.

That is why consultation starts with equipment, menu and hours. You decide when a brand is available, so we can often choose hours that fit your service. If the model does not make sense for your kitchen, we say so.
